Homemade Whole Wheat, Flax and Chia Pet Waffles

Easy, delicious homemade waffles!

Yield: 6 large Belgium Waffles

Ingredients:

3/4 cup whole wheat flour
3/4 cup all purpose flour
1/2 cup ground flax
2 tablespoons chia seeds
1/2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1 tablespoon sugar (I've been using organic coconut palm sugar, but any kind will work)
1/4 teaspoon salt
1 egg beaten
2 tablespoons veggie oil
1 1/2 cups milk

1 recipe of Sauteed Apples

Directions:

Mix all dry ingredients together in a large bowl. I use a whisk to mix well.

Add oil, beaten egg and milk. Mix until batter is smooth.

Lightly brush heated waffle iron with oil. Pour mix into waffle iron and cook until golden brown.

If making several batches of waffles, you can keep waffles warm on a cookie sheet ( don't stack them keep them in a single layer) in a 250 degree oven.

Top with warm apples, and add a dollop of vanilla yogurt and maple syrup if desired.
